Depends on the situation tbh. A decent digital desk with full recall is an amazing thing - set up each band's levels during soundcheck, and save to a patch to just instantly recall as they play! No more bloody beer-stained recall sheets.
As for iPad, plenty of imaginative midi control apps available so in theory, you could hook up to a lighting desk and do some insane light shows...

A engineer friend of mine has a frequency response thing on his iPod, which shows decibels and full spectrum frequencies in real time.
Thing is I have a decibel monitor and you shouldn't really need a computer to tell you what you need to know about the frequencies you can hear. So I'm not 100% sure whether there is anything worth me investing in...
Re: Digital desk - I had my first experience when JPL's enginer, a chap called Adie from Oxford turned up with one, they are amazing. Built in gates and compression etc with the flying faders - which I had only seen previously in a recording studio. He reckoned you can pick them up second hand for about 300, but I've never checked
